KERALA STYLE ETHAKKA APPAM (PLANTAIN FRITTERS)

I was longing to have some Ethakka Appam, which is difficult to prepare in Jodhpur since Ethakka or Netrapazham, a variety of plantain used for preparation, is not readily available there. So as I was going home for vacation, I have decided to prepare it.

In Kerala cuisine, a variety of plantain recipes are available since plantain is abundantly available. Among which, Ethakka Appam, also known as Pazham Pori, most common and is a genuine tea-time snack of Kerala and the popular and favorite snack of a Keraliyan. Relish it all along with a cup of hot steaming tea or coffee. And of course, it is an easy-to-cook snack which is really delicious and satiating.


Ingredients:-

1. Ripen Plantain (Nendrapazham) – 2 nos., large
2. Maida Flour – 1 cup
3. Rice Flour – 3 tbsp.
4. Milk – 2 tsp.
5. Turmeric powder – a pinch
6. Sugar – 2 tsp. (adjust as per the sweetness of plantain)
7. Salt – a pinch
8. Baking Powder – a pinch (optional)
9. Oil – for frying

Method:-

1. Peel the banana skin and cut into two pieces. Then slice each piece lengthwise into 2-3 slices of one centimeter thickness. Keep it aside

2. Now mix the remaining ingredients except oil along with enough water enough to give a medium consistency smooth batter. Take care not to form lumps

3. Now heat oil in frying pan.

4. Dip the banana pieces thoroughly in the batter to cover it fully and slowly arrange them in the frying pan.

5. Fry till both the sides are crisp and golden brown in color.

6. Keep it in paper towels and allow the excess oil to drain.

7. Serve hot with a cup of tea or coffee
